Gigante Beans Recipe:

Ingredient List:

  • 1 pound Gigante beans, dried
  • 2 large leeks, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1/2 cup olive oil
  • 1 cup sundried tomatoes, chopped
  • 3 tablespoons honey
  • 3 tablespoons red wine vinegar
  • 1/2 cup fresh thyme leaves
  • 1/2 cup fresh oregano leaves
  • 1 large sprig of rosemary
  • Salt and pepper to taste

Method:

  1. Soak the dried beans overnight in a large pot with 3 inches of water over the top of the beans.
  2. The next day, drain the beans, place them back in the pot, and add fresh water 3 inches over the top of the beans.
  3. Add the bay leaves to the pot, bring to a boil, then reduce to a simmer.
  4. Cook uncovered for approximately an hour; the beans should be still a bit firm.
  5. Preheat oven to 375° degrees.
  6. Drain the beans while saving the cooking liquid.
  7. Transfer the beans to a large braising dish.
  8. Mix in the leeks, garlic, oil, tomatoes, honey, and vinegar.
  9. Add some reserved cooking liquid until the beans are just submerged, cover with parchment paper, and tightly wrap with foil.
  10. Bake for approximately an hour until tender.
  11. Uncover, add fresh herbs, and bake for another 30 minutes.
